Juan Camilo Quintero, of Columbian origin and a decidedly international background, having worked alongside Chefs of the ilk of Bottura and Arzak, as Executive Chef of Borgo San Felice manages both restaurants: Il Poggio Rosso and the Osteria del Grigio.
Chef Enrico Bartolini is interpreted by the talented Quintero in the form of an elegant gourmet experience, defined by assertive yet simple flavours in line with local traditions and imbued with a strong spirit of innovation.
The intent is to draw from the Tuscan culinary tradition, using ingredients that are closely associated with the region, while interpreting them in a cosmopolitan key, with simplicity and respect for each individual flavour, to offer guests authentic “tasting experiences” that are both elegant and consistent.
